Let's have a look at a little overview:Dr Ikeda Kikunae, a chemistry professor at the University of Tokyo, wanted to identify the flavouring that makes the dashi soup his wife makes from fish and seaweed so delicious. He finally succeeded in 1908 in isolating kombu royal algae. This substance is glutamic acid, and its compound (salt) with sodium is glutamate. Ikeda Kikunae suggested that this flavour should be called umami (essence of flavour), or delicacy. Much later, in 1985, umami was adopted as the 5th essential flavour.Glutamic acid is an amino acid present in the protein of many foods, released during cooking or fermentation. Our brains love foods containing glutamate, we unconsciously crave them. This compound amplifies the 'meaty' or 'sea' taste sensation, which can be perceived by all taste buds on the entire surface of the tongue. Umami is longer lasting than other basic flavours.

Glutamate doesn't need to be broken down, it doesn't need energy to be used, but as soon as it gets into the stomach it can be delegated to do the job. It has an important role in removing harmful nitrogen in the body. It does not give a full feeling, increases saliva secretion, helps activate taste receptors, enhances the taste of food and stimulates hunger.
