If you anchor the body flat side down and the hook comes out the other side, use what is called a darting action with sideways sliding movements and wide tail swings.

Alternatively, if the flat side is facing up and the hook comes through it, the best option is to use a more precise action with high frequency tail movements that mimic the natural fish swim.
