It contains more than 20 percent water soluble substances, which makes it incredibly attractive tocarp. Minimal colour variation is possible between the same flavour of preserved, salted and freshly made bait. This is due to the varying moisture content of the preserving liquid and the different drying processes!

In the finished product, there may be a difference in shade due to differences in the shade of chilli, spices and other ingredients used in the production process. The difference in hue does not imply a change in quality, neither in terms of texture nor in terms of mouthfeel.
